FRIED SMELT

Cut fin and tail fin, two fins on sides. Check inside. Wash and drain dry.

BATTER:

1/2 c. flour
4 eggs
1/2 c. Romano cheese
Black pepper
Oregano
Garlic powder

Like pancake batter, hurry up and put in hot oil until brown.
