STUFFED CABBAGE | |
1 lb. ground beef 1/4 c. uncooked rice 1 lg. onion (chopped) 1/4 c. lemon juice 2 c. sauerkraut, drained 2 lb. loose cabbage leaves 1/2 c. water 1 tbsp. salt 1/4 tbsp. pepper 1 1/2 c. tomato sauce 1/4 c. brown sugar Steam cabbage leaves 3 to 5 minutes. Mix together beef, rice, onion and lemon juice. Wrap a cabbage leaf around portion of mixture until all leaves and beef mixture are used. Place seam side down in large saucepan lined with cabbage leaves. Combine water, salt, pepper, tomato sauce and brown sugar. Pour 1/2 of sauce over cabbage rolls. Place sauerkraut on top and cover with cabbage leaves. Pour remaining sauce over, bring to a boil then simmer covered for 2 hours (serves 6). May be cooked in slow cooker on low for about 8 to 10 hours. |
