LENTIL TOMATO SALAD 
1 cup dried lentils
1 quart water
1 teaspoon salt
1/2 cup olive or salad oil
1/4 cup tarragon or cider vinegar
1 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1/4 teaspoon pepper
1/2 cup chopped green onion
2 tablespoons chopped fresh parsley
3 medium tomatoes chopped or sliced
1 teaspoon chopped chives

Rinse lentils and place in a saucepan. Add water, salt and bring to a boil. Reduce heat and simmer, covered about 30 to 40 minutes until lentils are just tender. Drain.

In a large bowl, combine oil, vinegar, salt, mustard, paprika and pepper. Mix well. Add green onions, parsley, and hot drained lentils. Toss all until well-coated. Garnish with tomatoes and chives. Serve warm or cold.....tastes good with pita bread.
