SPICY SPUD CHICKEN 
1/3 c. butter, melted
2/3 c. instant mashed potato flakes
3 tbsp. taco dry seasoning mix
1/8 tsp. pepper (red)
1/3 c. grated Parmesan cheese (shaker kind)
1 (2 1/2 to 3 lb.) chicken, cut into 8 pieces

Preheat oven to 375°F. Coat 9 x 13 baking dish with nonstick cooking spray. Place the melted butter in shallow dish. In a large bowl, combine the remaining ingredients except chicken. Dip chicken pieces into melted butter, then potato mixture, coating well. (I use gallon storage bag to shake it in.)

Place chicken in the baking dish and bake 45 to 60 minutes or until golden and no pink remains in the chicken.

Tip: Also very good on pork chops.
