RED CABBAGE OR BYRISH KRAUT
(WHITE)
 
1-2 lb. head cabbage, sliced
1 onion, finely cut
1/2 tsp. salt
Pepper to taste
5 tbsp. sugar (to taste)
1 tbsp. bacon fat or 1/2 each of fat & Canola oil
2 oz. cider vinegar
6 oz. water
1 apple, chopped (or 1 c. apple juice)

Heat fat and/or oil in pot and saute onion lightly. Add cabbage and remaining ingredients. Cook slowly for 2 hours, adding water at times, if it should cook off. For red cabbage.
