CHEESE POCKETS 
4 c. flour
1/2 tsp. salt
1 egg
1 tbsp. shortening
1/2 c. sugar
1 c. milk
1 cake yeast, dissolved

Mix all dry ingredients together. Add shortening, egg, milk and dissolved yeast. Knead until smooth. Put in warm place to rise for 2 hours or more. Roll out on floured board 1/4 inch thick. Cut in 4 inch squares. Place 1 tablespoon of cottage cheese mixture in each square. Fold corners together and place in greased baking pan. Let stand in warm place 1/2 hour. Brush tops with beaten egg yolk. Bake in hot oven about 30 minutes.

FILLING:

2 c. dry cottage cheese
1/2 c. sugar
1/2 tsp. salt
1/2 tsp. cinnamon
2 eggs

Mix all together and use as filling.
