LEMON-MUSTARD CHICKEN 
6 skinned boneless chicken breasts
1/4 c. butter
3 tbsp. Dijon mustard
3 tbsp. fresh lemon or lime juice
1 tsp. tarragon
1/2 tsp. salt

Preheat oven to 375 degrees. Place chicken in shallow baking pan. In small saucepan, melt butter, stir in mustard, lemon juice, tarragon and salt. Pour over chicken. Bake 45 minutes or until cooked through. Good with pork, veal, or fish. Serve over rice. Serves 6.
