CHEESY GARDEN CASSEROLE 
2 c. cooked brown rice
1 lg. polybag frozen Italian vegetable blend
1 sm. box frozen, chopped broccoli
1 jar marinara or spaghetti sauce (16 oz.)
1 c. longhorn cheese, shredded
1 c. Monterey Jack cheese, shredded

Place rice in bottom of 10x6x2 inch baking dish. Barely cook vegetables, drain off all liquid and spoon vegetables over rice. Top with marinara sauce. Cover and bake 30 minutes at 375 degrees. Combine the cheeses, sprinkle over casserole and return to oven to melt cheese.
