BEEF GARDEN CASSEROLE 
2 lbs. ground round
1 tbsp. cooking oil
1 med. onion, chopped fine
2 (10 oz.) pkgs. frozen mixed vegetables
1 can tomato soup
3 c. mashed potatoes
1 1/2 c. sharp cheese, grated

Cook ground round and onion in oil until lightly browned. Drain and add the mixed vegetables which have been cooked according to package directions and drained. Add tomato soup. Mix. Pour into 2 quart casserole and top with dollops of potatoes and then grated cheese. Heat in 350 degree oven until cheese is bubbly.
