BREAKFAST EGG CASSEROLE 
8-12 eggs
1 lb. sausage or chopped ham or bacon
3 tbsp. butter
1/4 c. flour
2 c. milk
2 c. grated cheese
1 (4 oz.) can drained mushrooms
1 1/2 c. dry bread crumbs
Paprika

Melt 3 tablespoons of butter in a saucepan. Add 1/4 cup flour; mix into a paste. Add 2 cups milk, cook to make sauce. Add grated cheese. Cook 1 pound of sausage, chopped ham or bacon.

Scramble 8-12 eggs. Mix all ingredients together, except bread crumbs. Mix all ingredients well. Add drained mushrooms. Spread in 9 x 12 inch pan. Cover with dry bread crumbs. Sprinkle with paprika. Refrigerate overnight. In morning put in 350 degree oven and bake for 30 minutes or until done. Serves 12.
