BREAKFAST EGG - SAUSAGE BAKE 
1 loaf bread (stale, cubed or crumbled)
1 doz. eggs
1 lb. bulk sausage
6 c. milk
1/2 lb. grated Cheddar cheese
Several green onions, minced tops included
1 pkg. chopped broccoli, thawed, raw (optional)
1/2-1 tsp. dry mustard
Dash paprika

Brown sausage in pan, breaking it with wooden spoon; remove from drippings, but save the drippings. Using a 10 x 15 inch baking pan or 2 smaller pans, grease them with sausage drippings. Place cubed bread in pan, add browned sausage, grated cheese, onion and/or broccoli; stir together (may add more drippings sprinkled over mixture).

Beat eggs. Add milk and seasonings. Pour over mixture in pan. Cover and refrigerate overnight. Remove cover before baking. Bake at 325 degrees about 1 hour until dry and golden brown. Cut into 12, 15 or 20 pieces depending on size of serving desired.
