MINTED CONFETTI COLE SLAW 
This salad is a healthful alternative to traditional cole claw recipes. In contains no mayonnaise, so it keeps well during picnics.

4 c. thinly sliced green cabbage
3 c. thinly sliced red cabbage
2 c. grated carrots
1 c. thinly sliced green onions
1/2 c. chopped fresh mint
1/3 c. olive oil
1/3 c. champagne vinegar or white wine vinegar
1 tbsp. Dijon-style mustard
2 tsp. sugar
1/4 tsp. salt
1/2 tsp. white pepper

In a large bowl, combine green and red cabbage, carrots, green onions and mint.

In a separate bowl, whisk together oil, vinegar, mustard, sugar, salt and pepper. Pour dressing over vegetables and toss until coated. Slaw can be served chilled or at room temperature.

Makes 12 servings.
