APPLE POUND CAKE | |
3 c. flour 1 tsp. baking soda 1 tsp. salt 1/2 tsp. nutmeg 2 c. sugar 2 tsp. vanilla 1 c. chopped pecans or walnuts 1/2 tsp. cinnamon 1 1/2 c. corn oil 3 eggs 2 c. finely chopped apples 1/2 c. raisins Combine flour, salt, soda, cinnamon and nutmeg in a bowl and set aside. In a large bowl, combine oil, sugar, eggs and vanilla and beat with an electric mixer on medium speed. Gradually beat in flour mixture until smooth. Fold in apples, nuts and raisins. Turn into a greased and floured 10" tube pan or bundt pan and bake in a 325 degree oven for 1 hour and 15 minutes or until cake tester inserted in center comes out clean. Cool on wire rack 10 minutes then remove from pan. |
