FRESH APPLE POUND CAKE 
1 1/4 c. oil
3 c. finely chopped, peeled apples
1 c. chopped nuts
1/2 c. raisins
2 c. sugar
2 tsp. vanilla
3 eggs
3 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg

Beat oil, sugar, eggs and vanilla, until well blended. Combine dry ingredients and add to sugar mixture, beating well; then stir in apples, nuts and raisins. Spoon batter into a greased and floured tube or Bundt pan. Bake at 325 degrees for 1 hour and 15 minutes or until done. Let cake cool in pan 10 minutes. Be careful not to overbeat this cake.
