APPLE POUND CAKE 
2 c. brown sugar (firmly packed)
1 1/2 c. vegetable oil
3 eggs
3 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. vanilla
1 c. chopped apples
1 c. drained crushed pineapple
2 bananas, mashed
1 c. flaked coconut

Combine brown sugar and oil; add eggs and beat until smooth. Combine flour, soda and salt; add to egg mixture and blend well. Stir in vanilla. Add fruit and mix well. Spread in 9 inch tube pan. Bake at 325 degrees for 1 hour 20 minutes. This cake tests even better after 2 or 3 days. It also freezes well.
