APPLE POUND CAKE 
2 c. firmly packed brown sugar
1 1/2 c. oil
3 eggs
3 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. vanilla
1 c. finely chopped apples
1 c. drained pineapple
2 mashed bananas
1 c. flaked coconut

Combine brown sugar and oil; add eggs and beat until smooth. Combine flour, soda and salt; add egg mixture and blend well. Stir in vanilla. Add fruit and mix well.

Spread in 9 inch tube pan. Bake at 325 degrees for 1 hour and 20 minutes or until toothpick inserted near center comes out clean.

Note: This cake tastes even better after two or three days. It also freezes well.
