RICE PUDDING 
1/2 c. uncooked rice (not instant)
1/2 tsp. salt
1/4 c. sugar
1/4 tsp. cinnamon
2 1/2 c. milk
1/2 c. raisins

Combine all ingredients in top of double boiler. Cover and cook over boiling water until rice is tender and milk is almost absorbed, about 1 hour, stirring frequently. Serve warm with cream or a soft custard.
