7 to 8 qts. boiling salted water 2 lbs. samp (coarse cornmeal) 1 lb. yellow eyed beans, Limas or any other beans of your choice 2 tbsp. bacon fat (other shortening can be used) 2 onions 3 to 4 lbs. meat (beef or ham hocks, spareribs) Place samp and beans in colander and sort for foreign matter that may be mixed in. Wash and place samp and beans in large kettle with boiling water. Add rest of ingredients. Cook for 3 to 4 hours until tender. |
