BROCCOLI CASSEROLE 
2 tbsp. flour
1/2 c. nonfat milk
1/4 c. chopped onion
Vegetable oil cooking spray
8 oz. grated lowfat Cheddar cheese
3 c. finely chopped broccoli
6 egg whites (beaten)
3 lg. sheets phyllo dough

Preheat oven to 325 degrees F. Coat a shallow 1 1/2 quart casserole dish with cooking spray. Set aside.

Stir flour into nonfat milk until it dissolves. Spray frying pan with vegetable cooking spray and saute onion. Add milk mixture, stirring constantly until thickened. Blend in cheese. When cheese is melted, add broccoli. Pour into casserole dish. Add egg whites and mix gently.

Cut sheets of phyllo dough in half. Top casserole mixture, alternating one piece of phyllo dough with one spray of vegetable cooking spray, to create six layers. Bake for 35-45 minutes.
