BROCCOLI WITH GREEK OLIVES 
2 lb. fresh broccoli
1/2 c. pitted Greek olives, assorted
1 clove garlic, chopped
2 tbsp. grated Parmesan cheese
1/4 c. olive oil
1/8 lb. feta cheese
1/8 tsp. salt
1/8 tsp. pepper

Steep the garlic in the olive oil for 1 hour ahead of time. Cook the broccoli in salted water. Drain and set aside. Turn the oil into a sauce pan and bring to a simmer for a few minutes. Add the broccoli along with the seasonings and simmer for 10 minutes. Slice the olives into small pieces and add to the sauce pan. Cook 5 minutes longer and turn out on a serving platter. Sprinkle on the Parmesan cheese. Garnish with pieces of feta cheese.
