STUFFED FISH 
1 rock fish or flounder, at least 3 lbs.

Clean fish and sprinkle lightly with salt.

DRESSING:

1 c. bread crumbs
1 c. mashed potatoes, can use instant potatoes
3 tbsp. finely chopped celery
3 tbsp. finely chopped onion
1/2 tsp. oregano
1/4 tsp. sage

Place fish in baking dish. Add dressing on each side. Sliver lemon and put 2 or 3 wedges on fish. Bake at 350 degrees for about 25 minutes. 1 cup crab meat may be added to dressing.

Melt 1 stick butter and add juice of 2 lemons for - lemon butter to add to fish. Serve lemon butter on side.
