STUFFED FISH ROLL-UPS 
1 c. cooked rice
1/3 c. butter
1/3 c. lemon juice
2 tsp. salt
1/4 tsp. pepper
1 c. chopped broccoli
1 c. shredded cheddar cheese
8 fish fillets, about 2 lbs, thawed
Paprika

Preheat oven to 375 degrees. Melt butter; stir in lemon juice, salt and pepper. In a medium bowl, combine rice, broccoli, cheese and 1/4 cup lemon mixture. Mix well. Divide broccoli mixture evenly among the fish. Roll up and place seam side down in a shallow baking dish. Pour the remaining sauce over roll-ups. Bake 25 minutes or until fish flakes with a fork. Spoon sauce over individual servings and sprinkle with paprika.
