STUFFED FISH FILLETS 
6-8 fillets
2/3 c. water
3 tbsp. butter
2 c. seasoned stuffing
6-8 pieces partially cooked bacon
1 med. onion & 2 stalks celery, chopped
Few drops lemon juice

Onion and celery may be sauteed and added to stuffing.

Combine stuffing, water and melted butter. Put stuffing on each fillet, roll up and secure with bacon and toothpick. Sprinkle with lemon juice. Bake in greased, flat pan in 350 degree oven for 30 minutes.

LEMON SAUCE:

1 c. lo-cal mayonnaise
1/4 c. lemon juice, I find 3 tbsp. is plenty
1 tsp. paprika

Heat slowly, do not boil, to serving temperature stirring with wire whisk. Serve with fillets. 6 servings.
