STUFFED FLOUNDER FILLETS 
2 lg. flounder fillets or other white fish
1/2 c. grated carrots
1/2 c. chopped onion
1/2 c. chopped fresh mushrooms
1 tbsp. butter
1 c. wheat bread crumbs
1 tbsp. parsley
1/8 tsp. sage
1/8 tsp. basil
2 tbsp. lemon juice
Salt and pepper to taste

Saute carrots, onion, and mushrooms in butter and set aside. Combine bread crumbs, parsley, sage, and basil. Mix crumb mixture, lemon juice, and sauteed vegetables together.

Sprinkle fish fillets with salt and pepper. Place a small heap of stuffing mix on fillets, then roll up and secure with toothpicks. Place seam-side down in baking dish. Place remaining stuffing around fish rolls. Bake at 350 degrees until fish is flaky.
