LEMONY WALDORF FILLETS 
1 c. chopped apple
1/2 c. thinly sliced celery
1 tbsp. butter
1 c. herb-seasoned, stuffing mix
1/4 c. mayonnaise or salad dressing
1/4 c. chopped walnuts
1 tsp. lemon juice
1 lb. cod or other fish fillets (fresh or frozen)

Saute apple, celery in butter until crisp tender. Stir in stuffing mix, mayonnaise, walnuts and lemon juice.

METHOD 1: USING FROZEN FILLETS - place stuffing mix in four mounds around thawed, drained fish block. Bake at 350 degrees until fish flakes.

METHOD 2: USING FRESH FILLETS - place some stuffing on each fillet. Roll up. Place in baking dish. Spoon remainder of stuffing around fish. Bake at 350 degrees until fish flakes.
