HEART HEALTHY FILLET OF SOLE 
1/4 c. butter
1/4 c. chopped celery
2 tbsp. chopped onion
1 c. stuffing mix
1 tbsp. chopped parsley
1 tbsp. lemon juice
1/4 tsp. pepper
4 fillets of sole

Melt butter, fry onions and celery. Stir in stuffing mix, parsley, lemon juice and pepper. Grease casserole. Place 2 fillets on bottom. Top each with stuffing. Place 2 fillets on top of stuffing. Bake 20 minutes at 350 degrees. Will serve 2 to 4 depending on size of fillets. At serving, top with more butter sauteed with onion and lemon juice.
