POOR BOY FILLETS 
1 lb. ground meat
4 oz. mushrooms, drained
1/4 c. Parmesan cheese
3 tbsp. pimento stuffed olives, finely chopped
2 tbsp. bell pepper, finely chopped
2 tbsp. onion, finely chopped
1/8 tsp. salt
1/2 tsp. lemon pepper seasoning
12 slices bacon

Shape meat into a 12 x 7 1/2 inch rectangle on waxed paper. Sprinkle next 7 ingredients over meat. Begin at short end and roll jelly roll style, lifting wax paper as you roll. Place roll, seam side down, and shape with hands. Cover and refrigerate at least 2 hours.

Cook bacon until transparent (not crisp). Drain. Cut meat roll into 6 even slices. Wrap each with 2 slices of bacon, securing with toothpicks. Grill 4-5 inches from hot coals 8 minutes on each side. Can also be broiled.
