POOR BOY FILLETS 
5 slices bacon, partially cooked
1 lb. lean ground beef
Lemon pepper
1/4 c. Parmesan cheese
1 (2 oz.) can mushrooms, drained and chopped
3 tbsp. stuffed olives, chopped
2 tbsp. onion, chopped
2 tbsp. green pepper, chopped

Pat ground beef on wax paper to a 12 x 7 1/2 x 1/4 inch rectangle. Sprinkle all remaining ingredients except bacon over meat. Roll up jelly roll fashion starting at short end. Cut into 1 1/2 inch slices. Wrap edge of each slice with bacon. Secure with a toothpick. Grill over medium coals - 16 minutes. Turn once halfway through cooking time. (Easiest if laid on foil to cook.) Makes 5-6 fillets.
