STUFFED FILLET OF FLOUNDER 
1 pkg. frozen chopped spinach, thaw and drain
1/3 lb. Feta cheese, grated on 2nd size of grater
2-3 scallions, chopped
Parsley
Salt, pepper, paprika
1 1/2 tbsp. olive oil
4-5 slices fillet of flounder

Saute scallions in oil until slightly wilted. Add parsley, then drained spinach, salt and pepper. Saute 5 minutes. Cool slightly. Add Feta cheese. Place spinach mixture on fillets and fold up ends, holding in place with a toothpick. Place in a baking dish. Sprinkle with paprika. Bake 20-25 minutes in 375 degree oven. If liquid forms in pan, drain it off. Serves 4-5.
