BAKED GROUPER FILLET 
1 stick butter
Juice of 1 lemon
1 to 2 lbs. grouper (sole, flounder) fillets
1/2 to 1 c. Vigo bread crumbs (any bread crumbs, but secret is it must have cheese in it)

Wash fillet. Melt 1 stick butter in Pyrex baking pan. Pour juice of 1 lemon in butter; mix. Place fillet on top of butter; turn over in butter to coat. Sprinkle bread crumbs over fillet. Bake at 350 degrees for about 20 minutes, until fish is white when separated with knife and fork. (Do not turn over during baking; the bread crumbs make a nice crust.) Serve with sliced lemon and rice.

My grouper was cut very thick so it took 30 minutes. At the very end, I turned on the broiler for 2 minutes just to give it a nice crust. This was so easy & absolutely delicious! Can't wait to make it again.

So easy and delicious!!! I also had to cook an extra 10 minutes due to thick cut filets. The 2 minutes on broil helped make the crust golden brown and crispy.

Wonderful results with frozen grouper from BJ's. Olive oil instead of butter; seasoned Panko breadcrumbs w/ grated Parmesan cheese; a sprinkle of chipotle seasoning, and because these were big fillets, 10 minutes extra cooking time. Very pleased; thanks for this recipe.
