STUFFED POTATOES PARMESAN 
4 baked potatoes
1 egg
3 tbsp. skim milk
1 tbsp. grated onion
1/2 tsp. salt
1/8 tsp. pepper
1 tbsp. grated Parmesan cheese
paprika

Cut a slice off the top of each baked potato and scoop out the pulp into a large bowl. Add egg, milk, onion, salt and pepper. Beat well. Spoon mixture back into potato shells. Sprinkle tops with Parmesan cheese and paprika.

Bake at 350°F for 20 minutes.

Yields 4 servings.
