RUTH GRACA'S DUTCH APPLE CAKE 
1/2 tsp. salt
2 tsp. baking powder
2 c. flour
2 tbsp. sugar
1 egg
3/4 c. milk
1/4 c. butter and-or butter
1 to 2 c. peeled & sliced apples
1/4 to 1/3 c. sugar/cinnamon mixture
Whipped cream and-or vanilla ice cream (optional)

Sift together the first 4 ingredients in large bowl. Cut in 1/4 cup of butter. Beat 1 egg and 3/4 cup of milk in a small bowl. Mix with wooden spoon, just until blended. Spread in 2 greased and floured pans, then layer the sliced apples on top (1 layer). Sprinkle the sugar-cinnamon mixture evenly over layer of apples. Bake at 375 degrees 20 to 30 minutes. Serve warm. Delicious with whipped cream. Makes about 8 servings. NOTE: Use an 8 x 8 or 9 x 9 inch square pan.
