SMOKED SAUSAGE FAJITA 
8 oz. pkg. Mozzarella cheese
1 lg. onion
2 med. green peppers
1 lg. tomato
1 El Rio (or any other brand of Fajita seasoning) pkg.
8 to 10 flour tortillas
1 pkg. smoked sausage (lite)

Place flour tortillas in the oven for 10 minutes at 350 degrees. Place cut up smoked sausage in pan and cook, then drain off grease. Add onion, green peppers, tomatoes, and seasoning mix; cook until mixture is done. Turn off stove and while mixture is still hot, stir in Mozzarella cheese. Take flour tortillas out of oven and fill each flour tortillas with fajita mixture, then serve.
