GROUND TURKEY CHILI 
2 tbsp. vegetable oil
1/2 c. yellow onions, chopped
1 clove garlic, fresh, minced
2 tbsp. chopped green pepper
1 lb. ground turkey
3 tbsp. yellow mustard
1 tsp. salt
1/4 tsp. cayenne pepper
3 tbsp. chili powder
2 tbsp. cumin
2 (14 oz. each) cans tomatoes with liquid
2 (14 oz. each) cans kidney beans with liquid

Place oil in a large heavy pan. When hot, sauté the onions, garlic and green pepper until tender. Add the ground turkey and stir, when slightly cooked add mustard, salt, cayenne pepper, chili powder and cumin. Mix well and add the tomatoes. Cover and simmer for 45 minutes. Add the beans with their liquid and cook uncovered for 15 minutes.

I have been making this chili recipe for more than 15 years. Sometimes I use turkey, sometimes chicken. Whichever is cheapest when I'm making. It is a requested chili for tailgates, has never failed to get compliments. I won a work chili cookoff with it (beating out 7 others) and have recently entered a larger contest so, fingers crossed! It really is so easy and delicious. I make it as the recipe states except that I don't measure the vegetables (usually heavy on the green pepper) or the mustard (probably more than 2 tbsp). I think the mustard is the secret ingredient! I also like to use one dark red and one light red kidney bean cans.

I skipped the peppers/chili powder/cumin (can't handle spicy food), but the mustard added a REALLY nice taste. I updated it by using kidney and black beans. This is going to go with some chunky Italian bread and butter. For lunch tomorrow I'm going to have it over rice.

This recipe was great! I stumbled upon this recipe while searching for healthy and easy turkey chili recipes. I didn't have the cumin or kidney beans, which was fine for me. I did add mild chili peppers, red peppers, and corn.
