DANISH CUSTARD 
Quick caramelized custard 5 servings. Beat until light:

3 eggs

Add:

1/4 c. sugar
1/8 tsp. salt

Scald and stir in slowly:

2 c. milk

Add:

1/2 tsp. vanilla or 1 tsp. rum

Beat the custard until it is well blended. Sift 1/2 cup light brown sugar (if more sauce is needed or desired, double the amount). Place it in the bottom of a baking dish or mold and pour the custard on top of it.

Place the baking dish in pan of hot water in a moderate oven and bake the custard until it is firm. To test it see rule for cup custard (insert a silver knife and when custard no longer clings it is done).
