MIXED VEGETABLE MEDLEY | |
8 oz. carrots, sliced diagonally into 1/4 inch slices 8 oz. cauliflowerets 8 oz. broccoli, tops only 2 oz. fresh mushrooms 1/4 c. butter 2 tbsp. chopped red bell pepper 2 cloves garlic, minced 1/2 tsp. salt 1/4 tsp. basil, crushed Arrange carrots around the outer edge of a 10 inch round microwave dish. Arrange cauliflowerets next to carrots and broccoli next to cauliflowerets; place mushrooms in center. Combine butter, pepper, garlic, salt and basil in 1 cup glass measure. Microwave on High power for 1 to 2 minutes, or until butter is melted. Spoon over vegetables. Cover vegetables tightly and microwave on High power 6 to 8 minutes, or until barely tender; let stand 5 minutes. Makes 6 servings. |
