CHOCOLATE CHIP BANANA OATMEAL
COOKIES
 
3/4 c. shortening
1 c. sugar
1 egg
1 1/2 c. flour
1 tsp. salt
1/2 tsp. baking soda
1/4 tsp. nutmeg
3/4 tsp. cinnamon
1 c. mashed banana
1 c. chocolate chips
1 3/4 c. oatmeal (reg. or minute)

Preheat oven to 375 degrees.

Cream shortening, sugar and egg. Sift flour, salt, baking soda, nutmeg and cinnamon and add to creamed mixture. Stir in banana, chocolate chips and oatmeal. Drop batter by teaspoon on cookie sheet. Bake approximately 10 minutes until lightly browned. Let cool and store in airtight container.

These cookies also freeze good if you like to bake ahead.
