VIDALIA SWEET ONION PICKLES | |
7 qts. small Vidalia sweet onions 2 c. pickling lime SYRUP: 2 qts. vinegar 3 c. sugar 1 tbsp. salt 1 1/2 tbsp. turmeric 2 tbsp. mustard seed 2 tbsp. celery seed 2 tbsp. pickling spice Leave onion whole or quarter if large. Mix lime in 1 1/2 gallons water. After peeling and preparing onions, soak 24 hours in lime water in large enamel container. Stir onions occasionally. After 24 hours, wash several times in cold water to remove lime and then chill. Make syrup. Mix all ingredients together and bring to a boil; drop onions into syrup and bring to boil again. Cook 10 minutes. Seal in jars while hot. Serve chilled. Yield: about 12 pints. |
