TOP OF STOVE SUPPER 
1 tbsp. butter
2 potatoes, thinly sliced
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. diced onion
1 tbsp. diced green pepper
1 c. diced cooked ham
2 eggs, slightly beaten
1/4 c. grated Cheddar cheese

Next time you have leftover ham, try this if you're in a hurry for a simple family supper.

Melt butter in large heavy skillet. Layer next 6 ingredients in skillet. Cover and cook over low heat for 30 minutes. Pour eggs over ham mixture; cook an additional 15 minutes. Sprinkle with cheese; cover and cook 5 minutes or until cheese melts. Serves 3-4.
