WILTED SPINACH SALAD 
1 lb. fresh spinach
6 slices bacon, chopped
3 tbsp. onion, chopped
1/3 c. vinegar
1/3 c. water
2 tbsp. sugar
1/4 tsp. pepper

Wash spinach, remove thick stems and bruised leaves, drain well and set aside in salad bowl. Place bacon pieces in 1 quart casserole. Microwave at high (100%) until crisp, 6 to 8 minutes, stirring after half the cooking time. Remove bacon and set aside on paper toweling. Add onion to bacon fat. Microwave at High (100%) until tender, 1 1/2 to 2 1/2 minutes. Add vinegar, water, sugar and pepper. Microwave at High (100%) until boiling, 3 to 6 minutes. Immediately pour over spinach. Add bacon and toss well. Serve immediately.

Since microwave ovens vary in power, you may need to adjust your cooking time.
