KIELBASA BOILED DINNER | |
1 lg. can or 2 lbs. fresh sauerkraut 2 lbs. kielbasa 1 lg. onion, chopped 1 c. celery, chopped 2 bay leaves 6-8 med. carrots, 2 inch lengths 6-8 med. potatoes halves Kielbasa is a highly seasoned sausage of coarsely ground lean pork and beef, flavored with garlic and other spices! Drain and rinse sauerkraut of salt. Rinse kielbasa, cut in 1-inch serving links. Place half of sauerkraut in large heavy pot. Add sausage links, bay leaves, onion and celery. Cover with remainder of sauerkraut. Add water to barely cover sauerkraut. Bring to a boil, then simmer on low 45 minutes. Add carrots and potatoes. Bring links to top and bury vegetables in sauerkraut to flavor. Simmer to tender vegetables 1/2 hour. Serve hot. 6-8 servings. |
