SAUSAGE MINESTRONE 
1/2 lb. bulk Italian turkey sausage
1 c. chopped onion
2 cloves garlic, finely chopped
8 c. water
1 (28 oz.) can Italian tomatoes, undrained and broken up
1 (15 1/2 oz.) can chick peas
5 beef bouillon cubes
Parmesan cheese, grated
2 tbsp. Italian seasoning
1/4 tsp. pepper
2 carrots, pared and sliced
1 can kidney beans
1 (9 oz.) pkg. spaghetti, broken up

In a large kettle, brown sausage, onion and garlic. Pour off fat. Add all ingredients except chick peas, beans, spaghetti and cheese. Bring to a boil; reduce heat. Simmer, uncovered, 1 hour.

Stir in chick peas, beans and broken spaghetti. Simmer 10-15 minutes longer. Serve with Parmesan cheese. Makes about 2 1/2 quarts. Green beans can be substituted for kidney beans.
