APPLE-NUT POUND CAKE 
Mix this by hand for best results.

2 cups sugar
1 1/2 cups vegetable oil
3 eggs
3 cups self-rising flour
1 tsp. vanilla
1 tsp. lemon flavoring
3 cups finely diced apples (peeled)
1 cup coconut flakes
1 cup chopped nuts

Preheat oven to 325°F.

Mix sugar, oil and eggs until blended. Add flour, a little at a time. Mix well. Add flavorings, apples, coconut and nuts and stir until batter looks uniform and well mixed.

Pour into greased Bundt pan and bake at 325°F for 1 hour 15 minutes. Let set in pan for 10 minutes before inverting.
