MICROWAVE CHICKEN BREASTS 
4 lg. boneless chicken breast halves
1/2 tsp. salt
1/4-1/2 tsp. black pepper
2 tbsp. olive or salad oil
2 tbsp. butter
3 tbsp. chopped fresh chives or green onions
Juice of 1/2 lime or lemon
2 tbsp. brandy or cognac, optional
3 tbsp. chopped parsley
2 tsp. Dijon style mustard
1/4 c. chicken broth

Place chicken breasts between sheets of waxed paper, pound slightly. Sprinkle with salt and pepper. In a microwave safe dish, melt butter and mix with oil. Place breasts in dish, coating breasts on both sides. Microwave at high power for 3 minutes, let rest for 1 minute, turn breasts over. Microwave again at high power for 3 minutes until chicken breasts are done. Set aside.

Prepare sauce by mixing chives or green onions, lime juice and brandy (if used) mustard and parsley in a microwave dish. Microwave at high for 1 minute. Pour sauce hot over chicken. Serve immediately with noodles.

Since microwave ovens vary in power, you may need to adjust your cooking time.
