RAISIN OATMEAL LOW CHOLESTEROL
COOKIES
 
1 c. flour, sifted
1/2 tsp. baking soda
1 tsp. salt
1 1/2 c. Quick cooking oats
2 egg whites, slightly beaten
1/4 tsp. cinnamon
1 c. brown sugar
1/3 c. oil
1/2 c. skim milk
1 tsp. vanilla
1 c. seedless raisins

Preheat oven to 375 degrees. Sift together soda, salt and cinnamon. Stir in oats. Combine egg whites, brown sugar, oil, milk, vanilla and raisins. Add to flour mixture; mix well. Drop batter teaspoon at a time on oiled cookie sheet. Bake 12-15 minutes. Shorter baking results in soft cookies, longer crisp cookie. Yield 3 dozen.
