ZUCCHINI COOKIES 
1 c. sugar
1/2 c. (diet or low fat) butter
1/4 c. egg substitute
1 tsp. vanilla
1 1/2 c. flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg

Beat first 4 ingredients well. Mix remaining ingredients separately and add to first mixture.

Add:

1 1/2 c. oatmeal
1 c. grated, drained zucchini
1/2 c. chopped nuts (optional)
1/2 c. raisins (optional)

Drop by tablespoons on Pam sprayed greased cookie sheet. Bake at 350 degrees for 10-12 minutes or until lightly browned.
