ZUCCHINI OATMEAL COOKIES 
1 c. butter
2 c. sugar
2 eggs
1 tsp. vanilla
3 c. whole wheat flour
1 tsp. salt
2 tsp. cinnamon
1 tsp. baking soda
2 c. grated zucchini
3 1/2 c. oatmeal
1 c. raisins

Beat butter and sugar together until creamy. Beat in eggs and vanilla. Mix dry ingredients together and add to creamed mixture. Stir in zucchini, oatmeal and raisins. Drop onto greased cookie sheets and bake at 350 degrees for 10-12 minutes. P.S. If using frozen zucchini, be sure it is drained, well.
