PUMPKIN PECAN MUFFINS 
1/2 c. pumpkin
1/2 c. sugar
1 egg
1/2 c. milk
1/4 c. butter, melted
1 1/2 c. flour
1/2 c. chopped pecans
1 tbsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
1/8 tsp. nutmeg

Grease muffin tins or line with papers. Beat pumpkin, sugar and egg until blended. Add milk and butter. Add dry ingredients. Batter will be lumpy. Fill cups 2/3 full. Bake at 400 degrees for 20 minutes. Makes 12 muffins
