PUMPKIN BRAN MUFFINS 
1 c. wheat bran cereal (not flaked)
1/2 c. undiluted Carnation evaporated milk
1 1/4 c. all-purpose flour
2/3 c. sugar
1 tbsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
1 c. Libby's solid pack pumpkin
1/2 c. vegetable oil
1 egg, slightly beaten
1/2 c. raisins
3 tbsp. cinnamon/sugar, mixed

In medium bowl, combine cereal and milk. Let stand 10 minutes or until milk is absorbed. In large bowl, combine flour, sugar, baking powder, salt, cinnamon, nutmeg and cloves; set aside. Add pumpkin, oil, eggs and raisins to cereal. Add liquid ingredients to dry ingredients; stir just until moistened. Spoon batter into greased or paper-lined 2 1/2-inch muffin cups; fill to top. Sprinkle each muffin with 1 teaspoon cinnamon sugar.

Bake at 400°F for 25 to 30 minutes or until wooden pick inserted in center comes out clean. Cool in pan and remove to eat!

Makes 9 muffins.
