SPINACH MADELIENE 
2 pkgs. frozen spinach
4 tbsp. butter
2 tbsp. flour
2 tbsp. chopped onion
1/2 c. evaporated milk
1/2 c. spinach juice form cooking spinach
1/2 tsp. black pepper
3/4 tsp. celery salt
Salt to taste
6 oz. Jalapeno cheese (or mild if desired)

Cook spinach according to directions on package. Drain and reserve juice. Melt butter in saucepan over low heat. Add flour, but don't brown. Add liquid slowly and cook until smooth and thick. Add seasonings and cheese. Stir until cheese melts. Combine with spinach. Put into casserole and cover with crumbs. (I use Italian.) Put in refrigerator overnight then heat in oven before serving. May be frozen.
